Notes
As the weather changes be it showers falling or the colder temperature rolling in, Some warming up in is oder! Its soup weather! And so I celebrated by making pumpkin soup! Of course with a Bahaiam flare (I used bahamian Sweet Potatoes). Its hearty, healthy and full of flavour.
I cooked my batch in my pumpkin soup pot for the day aka my slow cooker so the flavors could develop over a period of time and well I dint have to sit and watch the pot….I’m pretty sure I’ve mentioned this before but Im a lazy cook (lol). You don’t need cream or milk for this recipe the pumpkin itself will be the base all you need is a blender, masher, or even a fork, once the pumpkin is soft enough all you have to do is mash it down. So if you’ve been searching for a pumpkin soup recipe without cream, this recipe is right up your alley.
Whats the best part of this recipe you may ask? It’s flexible. You can swap in the sweet potatoes, meat or the vegetables for what ever suits your fancy! What ever you have available, will do adjust the spice to your taste, and even add your favorite root vegetables. It’s the kind of meal that warms you from the inside out and keeps everyone coming back for seconds.
