Fall Meal Prep Ideas: Easy Recipes for a Cozy Week

As we approach the end of summer and fall vibes start to creep in, I wonder what meals I’m going to cook up this year! Last year, we had a number of crockpot dinners — which tends to happen in the fall. Most people think of warm, cozy comfort, but soup is not your only option! Especially here in the Bahamas, where it’s hot basically all year round. However, we still bring coziness to the kitchen, whether that’s with a soup or a hot meal.

In the spirit of fall, the meal prep will be focused on warm, cozy, homey meals. So warm to your tummy and your heart :). Meals you’d love to look forward to through the week, or maybe just even look forward to coming home for dinner. Think roasted vegetables, seasoned chicken, soups and a little pumpkin or cinnamon dessert.

Here’s the good news! With a few ingredients, you can make so many meals! You don’t have to slave away in the kitchen for hours on end, wondering what to cook and when. Plan your meals ahead! Mix and match your proteins, starches and veggies! That will give you variety as well as reduced kitchen time.

Why Fall Is Perfect for Meal Prepping

Fall is a great time to get back into a routine. (Keep an eye out for my YouTube series! All about change.) Summer is typically a really busy time with kids out of school, vacations, family outings, etc. Cooking becomes the least of your worries. But once fall arrives, it’s more like let’s chill and enjoy. It’s time to get ready for hibernation, LOL!

Meal prepping makes the transition a little easier. Because it’s less of a headache to figure out all the time, “what am I cooking?” Having just a few simple ingredients ready can help you:

  • Spend less time wondering what to cook after a long day
  • Use seasonal ingredients before they go bad
  • Make fewer last-minute food purchases
  • Pack filling lunches for work or school
  • Enjoy homemade comfort food without cooking from scratch every day

You also do not have to prep every meal for the entire week. I personally like the flexibility of preparing food for a few days at a time. It keeps the food fresh and gives you room to change your mind later in the week.

What Makes a Meal Feel Fall-Inspired?

A fall-inspired meal does not need to include pumpkin or even cinnamon. It’s about the flavors that bring a warm comfort to your heart.

This usually takes the form of warm, hearty flavors, merging just right with the correct ingredients to bring about that yummmmm… this feels like home feeling. And that is different for everyone. Come take a journey with seasoned roasted sweet potatoes, carrots, squash and chickpeas to start. Seasonings such as cinnamon, nutmeg, thyme, rosemary, sage, garlic and smoked paprika can also bring a little more warmth to simple ingredients. Add a little protein — I’m thinking roast the chicken at the same time — and you’ve got a mouthwatering meal!

Remember, the meals need to come together. So you have to season! And cook correctly to get that down-home feeling! Roasting, slow cooking, simmering and baking tend to create the kinds of meals we crave during a cozy season. (Come through, Crock-Pot!) A sheet-pan dinner, one-pot meal or warm bowl can feel fall-inspired without requiring a complicated recipe.

Cozy Proteins, Grains and Vegetables to Mix and Match

My approach to meal prep is to list out the ingredients I want, build multiple plates from those, and prep in that manner. Which my workbook would be a great help with!

That way you don’t have to force yourself to eat the same meal every day. Or you could prep the bowls you want in advance. Either way is a win-win. Choose one or two items from each group, add a sauce or seasoning, and you can build several different fall meals.

Proteins

  • Herb-roasted chicken
  • Ground turkey or Beef
  • Shredded slow-cooker chicken
  • Baked salmon
  • Turkey meatballs
  • Lentils, chickpeas or black beans
  • Boiled or scrambled eggs

Grains and Hearty Bases

  • Brown or White rice
  • Quinoa
  • Wild rice
  • Couscous
  • Whole-grain pasta
  • Mashed 
  • Roasted potatoes
  • Sweet potatoes

Vegetables

  • Butternut squash
  • Pumpkin
  • Carrots
  • Broccoli
  • Brussels sprouts
  • Green beans
  • Spinach 
  • Kale
  • Bell peppers 
  • Onions

For example, herb-roasted chicken, rice and a tray of roasted vegetables can become a grain bowl one day, a wrap the next day and a simple plated dinner later in the week. That little bit of flexibility can make meal prep feel less repetitive and so much more fun.

Make Your Fall Meal Prep Work for You

Your fall meal prep does not have to look like anyone else’s. You may want to prepare full meals, cook only a few ingredients or simply wash and chop your vegetables so dinner comes together faster. All of those count.

Start with the part of your week that causes the most stress. If mornings are hectic, prepare breakfast. If you always end up buying lunch at work, focus on two or three lunches first. A small amount of preparation can still make a big difference.
